SouthWest Chicken Salad

When I say that I love chicken salad, I mean I LOVE chicken salad. I have a fabulous dill chicken salad recipe here on the blog that I love, but this southwest chicken salad is my other favorite.

With black beans, sweet corn, sweet bell peppers, jalapeño, cilantro and leftover or rotisserie chicken in a light, citrusy greek yogurt dressing it is bright and full of fun flavors. Perfect for a weeks lunches or to share with friends during brunch or game night.

Let’s get started…

Begin by prepping everything. Chop up about 2 cups of cooked chicken, 1/2 cup of sweet bell pepper, 1/4 cup of fresh cilantro and 2 tablespoons of jalapeño and rinse 1/2 cup of black beans and sweet corn.

Now can you add the whole can of black beans and corn and use the whole sweet bell pepper? Of course you can! It’s your chicken salad and more is not a bad thing here.

Once everything is prepped, grab a large bowl and whisk 1/2 cup of plain Greek yogurt, a tablespoon of olive oil, a tablespoon of lime juice, a teaspoon of honey, a teaspoon of your favorite taco seasoning and a teaspoon of your favorite hot sauce until smooth.

Add the chicken, black beans, corn, peppers, cheese and cilantro and toss everything until it is evenly distributed.

This southwest chicken salad is absolutely packed with flavor and texture. It is full of protein, fiber, vitamins and antioxidants, so you can enjoy this deliciousness every day for lunch and feel just great about it!

Ingredients

  • 2 cups of chicken, cooked and diced
  • 1/2 cup of black beans, rinsed
  • 1/2 cup of sweet corn, rinsed
  • 1/2 cup of sweet bell pepper, diced
  • 1/2 cup of sharp cheddar, shredded
  • 1/4 cup of fresh cilantro, finely chopped
  • 2 tablespoons of jalapeño, seeds removed and finely diced
  • 1/2 cup of plain greek yogurt
  • 1 tablespoon of oilve oil
  • 1 tablespoon of lime juice
  • 1 teaspoon of honey
  • 1 teaspoon of your favorite taco seasoning
  • 1 teaspoon of your favorite hot sauce
  • salt and black pepper

Instructions

  • Combine 1/2 cup of plain Greek yogurt, 1 tablespoon of olive oil, 1 tablespoon of lime juice, 1 teaspoon of honey, 1 teaspoon of your favorite taco seasoning and 1 teaspoon of your favorite hot sauce in a large bowl
  • Season to taste with salt and black pepper
  • Add the remaining ingredients and mix until everything is evenly distributed 
  • Enjoy with chips or over greens
  • Chill leftovers in an airtight container for up to 3 days
