There are so many different types of salsa and although they are all super delicious, each one brings something unique to whatever it is served with. This southwest corn and black bean salsa brings the classic southwestern flavors to your tacos, burritos, fajitas and salads.
From fresh tomatoes, crispy red onions, sweet corn and creamy black beans to the kick of heat from the jalapeños, this salsa is fresh, flavorful and a wonderful addition to your next taco tuesday.
Let’s get it started…
To begin, gather 1 cup of black beans that have been rinsed with cool water, 1 cup of sweet corn that has been drained, 1 small minced red onion, 1 small minced jalapeño, 4 diced roma tomatoes, 1/4 cup of finely chopped fresh cilantro, a large lime and a pinch of salt, black pepper or some tajín seasoning, if you have it on hand.
Now put everything in a large bowl and toss until fully combined. Squeeze the juice from a large lime over the bowl and season with a big pinch of salt, black pepper and tajín. Take a quick taste and make sure that your salsa is seasoned enough and add more, if necessary.
This salsa is fabulous and it keeps well in an airtight container in the refrigerator, so if you don’t use it all today, put some on your scrambled eggs tomorrow morning and then over your chicken salad at lunch!
Southwest Corn & Black Bean Salsa
Ingredients
- 1 cup of black beans, rinsed
- 1 cup of sweet corn, drained
- 1 small red onion, minced
- 1 small jalapeño, minced
- 4 roma tomatoes, diced
- 1/4 cup of fresh cilantro, finely chopped
- 1 lime
- a pinch of salt, black pepper and tajín seasoning
Instructions
- Combine the ingredients in a large bowl
- Squeeze the juice of 1 lime over the salsa and season with a pinch of salt, black pepper and tajín seasoning
