Imagine if oatmeal and apple pie combined forces? Delicious, yes, but maybe this pairing sounds complicated or time consuming? I can assure you that it is not.
The most time consuming part of this process is peeling a couple of apples and even this step is optional! You just combine the ingredients, pour everything into a dish and bake it up.
Quick, easy, healthy and comforting. These spiced apple baked oats are one of my all time favorite weekday breakfasts. Let’s get started…
Begin by gathering your ingredients. You will need 1 3/4 cups of almond milk (I use unsweetened vanilla, but you can use any milk you have on hand), 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter, 1/2 cup of apple sauce, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cloves, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract and 1/2 cup of chopped walnuts.
You will also need 3 cups of old fashioned oats and 2-3 medium apples. I used pink lady apples today, but any firm, sweet apple will work great here. You can peel the apples, if you don’t want to include the peel, but it does become tender as the oats bake.
In a large bowl, whisk 1 3/4 cup of almond milk with 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter and 1/2 cup of apple sauce.
Fold 3 cups of old fashioned oats, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1 teaspoon of vanilla extract, 1/2 teaspoon of salt and 1/2 cup of chopped walnuts into the almond milk mixture until all of the oats are incorporated.
Finally, it is time to add the apples. You can dice up the apples and mix them into the oat mixture or you can thinly slice them and arrange them over the top of the oats.
I like doing a combination of both, so I have some finer bits of apples inside the baked oats and some sliced pieces over top. The apples that are mixed into the oats become very tender and sweet as they are baked, but the apples arranged over the top tend to keep a little bit more of their texture… plus, they look really pretty too…
Pour the oats into a greased baking dish. You could use a deep 9″x9″ dish, a standard 7″x11″ dish or a 9″-10″ deep oven safe skillet.
You could also divide the mixture into individual baking ramekins, if you prefer.
If you are topping the oats with sliced apples, distribute the slices over the top surface and press them down a bit. The apples can also be lightly sprinkled with coarse grained sugar if you want them to have a little bit of crunchy sweetness later on. Totally optional.
Bake the oats in a 350 degree oven uncovered for 30-35 minutes. In my oven, the oats were tender at the 30 minute mark and fully set with golden brown edges at the 35 minute mark. It just depends on how set you want your baked oats to be. I prefer to scoop mine into a bowl, but if you prefer to slice set portions out then leave the oats in the oven until they look fully set.
There is something wonderful about what happens to apples as they bake. Their natural sweetness is brought out transforming the oats into something that tastes a little more decadent than healthy, but with only 1/3 cup of brown sugar in the entire batch… these oats would definitely be considered low sugar compared to many other baked oat recipes.
One of my favorite things about baked oats is just how nicely they reheat, so I can bake them up on Sunday afternoon (or Monday morning, depending on how motivated I am) and have breakfast all week. Just add a splash of almond milk into a serving and microwave until warm and softened.
If I am serving these baked oats directly out of the oven, I usually serve them with a few slices of fresh apple and a dollop of vanilla greek yogurt. The warm tender oats and baked apples paired with cold, creamy yogurt and crisp fresh apples is something that you and anyone you serve will fall in love with.

They taste and look like something you spent a bit of time on, but really nothing could be further from the truth and who doesn’t love an easy meal that looks and tastes fancy?

Spiced Apple Baked Oats
Ingredients
- 1 3/4 cups of almond milk, unsweetened vanilla
- 2 large eggs
- 1/3 cup of brown sugar
- 1/4 cup of coconut oil or melted butter
- 1/2 cup of apple sauce
- 3 cups of old fashioned oats
- 1 teaspoon of baking powder
- 1 teaspoon of ground cinnamon
- 1/2 teaspoon of nutmeg
- 1/2 teaspoon of cloves
- 1/2 teaspoon of salt
- 1 teaspoon of vanilla extract
- 1/2 cup of walnuts, chopped
- 2-3 medium firm apples, peeled or unpeeled, diced or sliced
Instructions
- Preheat your oven to 350 degrees
- Grease a 9”x9” square baking dish or a 9”-10” oven safe skillet and set aside
- Combine 1 3/4 cup of almond milk with 2 large eggs, 1/3 cup of brown sugar, 1/4 cup of coconut oil or melted butter and 1/2 cup of apple sauce in a large bowl
- Add 3 cups of old fashioned oats, 1 teaspoon of baking powder, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cloves, 1/2 teaspoon of salt, 1 teaspoon of vanilla extract and 1/2 cup of chopped walnuts and mix until completely combined
- Fold in the diced apples
- Transfer the mixture into the prepared baking dish
- Optional: top with additional apples
- Bake in a 350 degree oven for 30-35 minutes or until the oats feels set around the edges
- Allow the oats to cool for 5-10 minutes before serving
- Optionally, garnish with yogurt and a few slices of fresh apple
