I love a good salad. The combination of different colors and textures can be so inviting and as much as I appreciate a plate full of bright colorful ingredients, this salad full of green on green on green makes me very happy. Just because this salad is monochromatic in color, does not mean that it is lacking in varying textures or flavors. In fact, this salad is bursting with so many different flavors, from earthy to sweet, and various textures, from creamy to crunchy.
Its fun, beautiful, delicious and satisfying… plus, this salad is truly jam packed with loads of vitamins, nutrients and powerful antioxidants that will help bring so many healthy things to your body in everything tasty bite.
Let’s get this salad started…
Although each ingredient in this salad was chosen for the texture and flavor that it adds to this beautiful dish, they are also each packed with valuable nutrients that our bodies need….
- Romaine – high in minerals like calcium, magnesium and potassium a d contains only about 8 calories in 1 cup
- Arugula – a powerful antioxidant, full of vitamin A and K
- Spinach – low in calories, full of vitamin K, folate, iron and magnesium
- Green Bell Pepper – full of vitamin A, B complex and C, plus calcium and iron
- Spring Onions – loaded with nutrients and help to aid in digestion and lower blood sugar
- Snap Peas – full of folate, lots of vitamins and beta-carotene
- Cucumber – contains electrolytes, vitamin A, B, C and K and copper, among other nutrients
- Avocado – provide lots of vitamins, nutrients and antioxidants, including lutein, beta-carotene and omega-3 fatty acids
- Granny Smith Apple – low in calories, high in fiber and collagen boosting vitamin C

Ok, so now that we are familiar with just how impressive each one of these fruits and veggies are, let’s start our salad! Begin by gathering 1 small head of thinly sliced romaine, 2 ounces of baby arugula, 1 cup of roughly chopped fresh spinach, 1 medium julienned green bell pepper, 1 cup of fresh snap peas, 3 thinly sliced spring onions, 1/2 cup of diced cucumber, 1/2 of a medium avocado, 1/2 of a medium Granny Smith apple that has been diced small, 1/2 cup of roughly chopped fresh cilantro, 1/8 cup of jalapeño or pepperoncini (optional) and 1/4 cup of my creamy avocado dressing (or your favorite dressing).
This is a big salad, full of so many flavors and textures, but if you happen to not like any of the ingredients on my list, feel free to omit or replace it with something else that you love!
Now combine everything and drizzle some of that fabulously creamy avocado ranch dressing over the bowl and enjoy your beautiful, healthy, vitamin packed salad!
Super Green Salad
Ingredients
- 1 small head of romaine, thinly sliced
- 2 ounces of baby arugula
- 1 cup of fresh spinach, roughly chopped
- 1 medium green bell pepper, julienned
- 1 cup of fresh snap peas
- 3 spring onions, thinly sliced
- 1/2 cup of cucumber, diced
- 1/2 medium avocado, diced
- 1/2 medium Granny Smith apple, diced
- 1/2 cup of fresh cilantro, roughly chopped
- 1/8 cup of jalapeño or pepperoncini (optional)
- 1/4 cup of creamy avocado dressing
Instructions
- Combine all of the ingredients in a large bowl
- Add your preferred amount of dressing and toss to combine
- Enjoy!
