Sweet Pepper Salsa

Did you know that bell peppers are actually fruit? And did you know that they contain the highest amount of vitamin C of all produce items? It’s true! They actually contain more than 300% of your daily requirement of vitamin C, which is 3 times more than the average orange! Bell peppers grow year round and get sweeter (and more beautiful in my opinion) as they ripen. The bright red, orange and yellow “sweet peppers” are simply green bell peppers left to ripen longer. Like a fine wine, these peppers get better with age.

There are many ways to enjoy these colorful peppers. They add great crunch and sweetness to a salad and can be stuffed in many delicious ways (check out my Italian Stuffed Pepper recipe!), but today, I am celebrating their delicious flavors in a festive salsa. Using every color pepper I could find, some jalapeño, cilantro and fresh lime juice, this salsa is simply fabulous and can be enjoyed in many different ways.

Let’s get it started…

Begin by dicing your peppers. You could do anything from a super fine dice to a chunkier one, but try to make them fairly uniform. I like to trim away any of the white flesh from the inside of the peppers, so you are left with only bright colors in your bowl of salsa.

Next, dice 1/2 of a red onion and finely mince 1 jalapeño. If you want to keep your salsa on the mild side, be sure to remove the seeds and inner membrane before you mince it.

Finely chop a small bunch of fresh cilantro and dice a large tomato. I used a bright yellow heirloom tomato for this salsa, but any flavorful tomato will work.

Combine everything in a large bowl, squeeze the juice from 1 large lime over the ingredients and add a healthy pinch of salt and black pepper. Toss to combine and taste to see if more salt or black pepper is needed.

Ingredients

  • 1 large green bell pepper, diced
  • 1 large red sweet pepper, diced
  • 1 large orange sweet pepper, diced
  • 1 large yellow sweet pepper, diced
  • 1 large heirloom tomato, diced
  • 1 medium jalapeño, seeds removed, finely minced
  • 1/2 red onion, diced
  • 1 small bunch of fresh cilantro, finely chopped
  • 1 large lime
  • salt and black pepper

Instructions

  • Combine the diced peppers, tomato and red onion in a large bowl
  • Add the finely minced jalapeño and finely chopped cilantro and toss to combine
  • Add the juice from a large lime and a pinch of salt and black pepper and toss again
  • Taste and add more salt or black pepper, if necessary
  • Serve immediately or chill in an airtight container until ready to serve
