
In my experience, everyone loves tiramisu… I know I sure do. There is something special about the mascarpone, the espresso, the dusting of cocoa powder. Tiramisu has its own vibe and today, we are baking cookies that lean into that vibe in a wonderful way.

These cookies are very tender with the best espresso flavor and the softest consistency due to the mascarpone right in the dough. These cookies mix up quick, chill for a little bit and then just drop onto a baking sheet. Super easy and super quick. They are perfect for last minute sweet needs or cravings and also make a great addition to a holiday cookie box!
Let’s get started…

In a large bowl, mix 113 grams of room temperature butter with 4 ounces of room temperature mascarpone (or cream cheese!), a large egg and 2 teaspoons of pure vanilla extract until smooth.
Add 210 grams of granulated sugar, 200 grams of all purpose flour, 5 grams of espresso powder, 1/2 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined.
Cover the bowl and chill the dough for an hour.

Once the dough feels firmly chilled, use a lightly greased cookie dough scoop to drop uniformly sized portions onto a parchment lined baking.
Bake in a 375 degree oven for 10-11 minutes or until they feel lightly set.

Let the cookies cool for a few minutes and dust them generously with confectioners sugar and cocoa powder.

Instructions
- Combine 113 grams of room temperature butter, 4 ounces of room temperature mascarpone or cream cheese, 1 large egg and 2 teaspoons of pure vanilla extract in a large bowl and use an electric hand mixer to cream everything together until smooth and fully combined
- Add 210 grams of granulated sugar and mix until fluffy
- Add 200 grams of all purpose flour, 5 grams of espresso powder, 1/2 teaspoon of baking powder and 1/2 teaspoon of salt and mix until just combined
- Cover the bowl and chill the dough for an hour
- Preheat your oven to 375°
- Use a lightly greased cookie dough scoop to scoop tablespoons of dough out and roll the dough into a smooth ball
- Place the dough onto a parchment lined baking sheet leaving 2 inches apart
- Bake in a 375° oven for 10 minutes or until the cookies are just set
- Let the cookies cool completely before dusting with confectioners sugar and cocoa powder
