Maple Chai Blondies

A chewy, cakey, tender blondie made with maple and warm chai spices. Perfect for fall baking!

Ingredients

  • 1 cup of butter, melted
  • 2 cups of brown sugar
  • 1/3 cup of pure maple syrup
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon of pure vanilla extract
  • 1 teaspoon of maple syrup
  • 2 cups of all purpose flour
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of cloves
  • 1/4 teaspoon of cardamom
  • 2 teapsoons of baking powder
  • 1 teaspoon of salt

Instructions

  • Preheat your oven to 350 degrees 
  • Grease a 9”x13” baking dish and line with parchment paper
  • In a large bowl, combine 2 cups of brown sugar into a cup of melted butter until fully combined
  • Whisk in 1/3 cup of pure maple syrup, 2 large eggs, 2 large egg yolks and a teaspoon of pure vanilla extract and a teaspoon of maple extract 
  • Add 2 cups of all purpose flour, 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, 1/2 teaspoon of nutmeg, 1/4 teaspoon of cloves, 1/4 teaspoon of cardamom, 2 teaspoons of baking powder and 1 teaspoon of salt and mix until just combined
  • Transfer the batter into your prepared baking dish
  • Optionally top with some course sugar
  • Bake in a 350 degree oven for 35-40 minutes or until a toothpick will come out of the center clean
  • Allow the blondies to cool a bit before transferring out of the baking dish
  • Store leftovers in an airtight container at room temperature for up to 4 days
